Summer Pita Pizzas with Spinach Salad

When you eat in season and from what is grown locally, your dishes take on a whole new flavor. Your pallet will awaken with a new admiration for foods it used to think were bland or tasteless. Challenge yourself to try and create new dishes from your garden harvest or from what you an buy at your local farmers market, you won’t be disappointed!

Ingredients for Summer Pita Pizza

  • 1/4  to 1/2 cup olive oil
  • 1 clove minced fresh garlic
  • 3 tablespoons red wine, champagne or even balsamic vinegar (choices!)
  • 1 teaspoon Dijon mustard
  • Salt, pepper
  • 1 sliced, small shallot
  • 4-8″ whole wheat toasted pitas, cut in half
  • 1 cup hummus [homemade or store bought]
  • 1 cup cherry or grape halved tomatoes
  • 1/2 cup crumbled Feta cheese [or cheese of your choice]
  • 1/2 cup chopped fresh herbs [dill, parsley, cilantro]
  • Fresh Spinach
  • Seasonal Fruit (blueberries, raspberries, strawberries)


Blend oil, vinegar, mustard, 1/2 teaspoon salt and pepper in a jar.
Add sliced shallot, taste to adjust!  Shake to mix.  Set aside.
Toast pita halves in oven for 8-10 minutes, 350 degrees OR in a toaster (easier).
Top pitas with the hummus, tomatoes, cheese, herbs and half of the vinaigrette (reserve other half for salad)

Spinach Salad

  • Fresh Spinach
  • Shallots
  • Seasonal Fruit
  • Reserved Dressing


Toss; herbs, spinach, shallots and dressing. Top with seasonal fruit and enjoy!
